This week is a busy one for us. Maybe it is the onset of the holidays or simply having two teenagers with all their activities going on. I am always looking for new ideas to have pre-made food around for everyone to grab and go. I often turn to Pinch of Yum. If you aren’t already following Lindsay, you must check her out. She has been blogging since 2010 and her recipes are amazing and her food is beautifully photographed.
I decided to try out her Spicy Chipotle Turkey Burritos and they did not disappoint! They were easy to make and I now have 15 burritos in the freezer ready to heat up for lunches and meals on the go.
They have the perfect amount of spice in them for us. If you don’t like things too spicy I would recommend cutting down on the chipotle peppers and chili powder by half. The beauty of this recipe is that you can use any veggies that you have on hand. This time I used sweet potato, zucchini, carrots and red bell peppers.
