If you have not yet tried overnight oats for breakfast you are missing out! They are easy to make ahead of time, and so nice to have in the fridge for you or your family to grab and go on busy mornings.
There are so many variations of overnight oats, but today I am sharing our favorite recipe made with raspberries and blackberries. I usually make 2-4 at a time, but you can certainly quadruple my recipe and make eight. They are fine in the fridge for several days, but let me warn you they disappear quickly.
I mix all the ingredients in a bowl first and then transfer them to jars. I recycle jam jars so I always have plenty on hand. Be sure to let them sit in the fridge overnight so that the ingredients all blend together nicely and the oats become soft.I like to add in some chia seeds, they are a great source of protein, calcium, and antioxidants. They are easy to find, I get mine at Vitamin Cottage in the refrigerated section.We always top our overnight oats with more fresh berries and sometimes chopped or sliced nuts; almonds are my favorite. I eat mine with a boiled egg, and I am fueled up until lunch.Try these little gems out and let me know what you think!
Raspberry & Blackberry Overnight Oats
- 1 cup rolled oats, dry
- 1 tbsp chia seeds
- 1 1/2 cups almond milk, unsweetened vanilla
- 1/2 cup fresh raspberries, cut into quarters
- 1/2 cup fresh blackberries, cut into quarters
- 1/2 tsp vanilla extract
- 1/4 cup plain greek yogurt
Mix all ingredients in a bowl, stir well.
Divide mixture between two glass jars with a fitted tight lid. Place in refrigerator overnight.
Before serving, top with more fresh berries and chopped nuts if desired.
