Valentine Caprese Salad

 

I love to pull out all my heart shaped cookie cutters this time of year and use them on anything and everything!

Heart shaped bread for sandwiches, heart shaped melon slices, and of course heart shaped cheese slices! A favorite at my house is Caprese Salad, so I had to give heart shaped pieces of fresh mozzarella a try. It’s also a great way to make Valentine’s Day fun without focusing on all things sugar! This salad is colorful, fresh, and full of heart-healthy ingredients.

Caprese Salad is a very easy to make; this is what you will need:

-Tomatoes (I like to use Roma and plan on 1 tomato per person)

-Fresh Mozzarella (1 large 8 oz ball will serve 4 people easily)

-Fresh Basil

-Extra Virgin Olive Oil

-Balsamic Vinegar

-Sea salt and freshly ground pepper

-Heart shaped cookie cutter

Cut your tomatoes and mozzarella into approximately 1/4 inch slices.

Use your cookie cutter to cut out your heart shaped mozzarella pieces. (Save the scraps of cheese for using in a green salad or snacking on later.)

Trim your basil. Layer your mozzarella, tomato, and basil on a small platter.

Drizzle with olive oil and balsamic vinegar. Sprinkle with sea salt and freshly ground pepper.

Serve and enjoy!
